GMW Recipe: Gourmet treats for a chocolate-themed wedding

Chef Eric Hott stopped by Good Morning Washington on Tuesday to demonstrate how to make the perfect gourmet treats for a chocolate-themed wedding.

Chocolate Marshmallows
25g Gelatin Sheets 160
125g Cold Water
150g Glucose
115g Water
340g Sucrose
185g Dark Chocolate
- Prepare a pan with Oil and paper on the bottom
- Bloom the Gelatin
- Melt the gelatin and combine with the glucose in the kitchen aid bowl
- Cook the water and sucrose to 110C and pour in the kitchen aid bowl over melted gelatin and glucose
- Whip till the mixture cooled to 40c
- Temper some of the mixture with the chocolate melted at 45C and fold in
- Cast the marshmallow and set for 24h
- Cut and dust with 50% cocoa powder and 50% cornstarch
